About Toledo - Tapas, Steak & Seafood
Toledo opened in 2019 as part of the Gran Destino Tower addition to Disney’s Coronado Springs Resort — a new 15-story hotel tower designed as an homage to the Art Deco aesthetics and cultural heritage of Spain. The restaurant sits at the top of the tower and was named for Toledo, the medieval Spanish city perched on a hilltop above the Tagus River, mirroring the restaurant’s own elevated vantage point above the resort.
Gran Destino Tower
Gran Destino Tower was conceived as a tribute to the creative partnership between Walt Disney and Spanish painter Salvador Dalí, who collaborated on the animated short Destino in the 1940s. That artistic connection runs throughout the tower’s design, from the Dalí-inspired murals in the lobby to the warm Iberian color palette and architectural details that reference Spanish Modernisme. Toledo, as the tower’s rooftop restaurant, is the crown jewel of this design vision.
A Resort Destination
Because Coronado Springs is a convention resort, Toledo serves a notably broad audience — from conference attendees looking for a proper dinner to Disney guests seeking a Signature Dining experience away from the parks. The tapas format makes it flexible: you can build a full meal from shared small plates, order a traditional three-course dinner, or simply settle in for drinks and a few bites at the bar. The bar program leans heavily into Spanish wines and sherries alongside creative cocktails that riff on classic Iberian flavors.
